Cauliflower Oatmeal with Dates and Coconut – oat free

A quick and easy grain-free alternative to traditional oatmeal

If you are looking to limit your intake of grains then this is worth trying. Riced cauliflower is used in place of oats and there are many versions of this recipe online. What I have is a simple go base recipe from which you can fully customize by adding and/ or substituting ingredients you might prefer.

In this version I use chopped pitted dates and shredded coconut for sweetness which adds a bit of extra fiber too. For an extra touch of sweet try adding coconut sugar or a few drops of liquid Stevia.

Too keep this dairy free you can use almond or coconut milk.

The vanilla extract and cinnamon add extra flavor and a delightful fragrance. Sometimes I will swap out Pumpkin Pie spice for the cinnamon.

Materials

  • 2 cups riced cauliflower
  • 6 to 8 pitted dates, chopped
  • ¼ cup shredded coconut
  • 1 tsp cinnamon or pumpkin pie spice
  • ¼ tsp vanilla extract
  • ½ cup almond milk or milk of your choice
  • 1 small dash of sea salt

Optional add-ins or toppings

  • dried cranberries
  • raisins
  • blueberries

Instructions

  • Add all ingredients to a saucepan and simmer on low until the cauliflower is heated through and the dates and coconut have softened.
  • Top with berries and almonds or whatever else sounds good!
  • The dates add a nice touch of sweetness to this dish, but if you are needing a little more sweetness, try adding a teaspoon of coconut sugar or Stevia drops
