This small batch recipe yields about 8 to 10 soft cookies…for breakfast!
Cookies for breakfast? Oh yes. I’ve been know to start my day with a cookie or two. When I came across a recipe for High Protein Paleo Breakfast Cookies, I felt a slight justification for my occasional breakfast food choice. The recipe below is an adaptation of the original recipe posted on the Paleo Hacks blog, I have included 1/2 cup of chocolate chips a bit of vanilla extract and a dash of sea salt.
The almond flour, hemp hearts and collagen powder work well together to make a light and soft cookie packed with protein and nutrients.
Grain Free Chocolate Chip Protein Cookies
A grain free protein packed cookie using almond flour, protein or collagen powder and hemp seeds
Materials
- 1/2 cup almond flour
- 2 TBSP collagen powder or protein powder
- 1/2 ripe mashed banana
- 1/2 cup almond butter or any other nut butter
- 1/2 tsp vanilla
- 2 TBSP hemp seeds
- 1 tsp baking powder
- 1 egg
- 1/2 cup chocolate chips optional
- dash sea salt
Instructions
- Preheat oven to 325 F
- Line a baking sheet with parchment paper
- Place all ingredients in a bowl, except the egg, and mix well
- Then add the egg and stir just until the egg is mixed in
- Scoop the batter on the the parchment paper, making 8 to 10 cookies
- Bake for 13 to 15 minutes
