Grain Free Chocolate Chip Banana Bread

A grain free banana bread recipe using almond and cassava flour in place of traditional wheat flour.

A warm loaf of banana bread right form the oven has always been a favorite around here. And since our bananas don’t seem to get eaten up as often as I planned, there always seems to be one or two very ripe ones ready to use.

When I began to rely less on traditional grain baking, I was looking for grain free flour alternatives. Along the way I discovered things like tigernut flour, coconut flour, almond flour, cassava flour, tapioca starch and Bob’s Red Mill Paleo Baking Flour, just to name a few! There is a place and time for each of these items. When and how you use these flours often depends on what you would like to make.

I tend to use these items in combination with each other. For example, using almond flour alone tends to make for a dense loaf of dessert-type bread. So for this banana bread recipe I use a combination of almond flour and a paleo baking flour mix, which turns out a lighter less dense bread.

Grain Free Banana Bread

Equipment

  • loaf pan
  • mixing bowl
  • parchment paper

Materials

  • 1 cup almond flour I like to use Anthony's
  • 1 cup cassava flour I use Otto's brand Casava Flour
  • 2 large ripe bananas
  • 2 TBSP monk fruit sweetener, or other sweetener of choice Lakanto brand
  • 2 eggs
  • 2 tsp vanilla
  • 1/2 cup chocolate chips optional
  • 1 1/2 tsp baking powder
  • 1/4 tsp tsp sea salt
  • 1 or 2 sprays avocado spray I like to use Chosen Foods brand

Instructions

  • Preheat oven to 350 degrees F.
  • Line a loaf pan with parchment paper, and spray the paper with the oil spray.

  • Measure out the dry ingredients into a mixing bowl.

  • To a mixer or food processor add the bananas and blend until smooth. Add the eggs and vanilla and blend again until just mixed in. You don't want to over mix the eggs.
  • Now fold the wet ingredients into the bowl with the dry ingredients, add the chocolate chips and gently stir until all ingredients are blended together.

  • Scoop the batter into prepared loaf pan.

  • Bake for 40 minutes and check to see it center is cooked through.
  • Remove from oven and let cool for 10 to 15 minutes.
