Grain Free Banana Bread
Banana bread with almond and cassava flour in place of traditional wheat flour

- 1 cup almond flour I like to use Anthony's
- 1 cup cassava flour I use Otto's brand Casava Flour
- 2 large ripe bananas
- 2 TBSP monk fruit sweetener, or other sweetener of choice Lakanto brand
- 2 eggs
- 2 tsp vanilla
- 1/2 cup chocolate chips optional
- 1 1/2 tsp baking powder
- 1/4 tsp tsp sea salt
- 1 or 2 sprays avocado spray I like to use Chosen Foods brand
Preheat oven to 350 degrees F.
Line a loaf pan with parchment paper, and spray the paper with the oil spray.
Measure out the dry ingredients into a mixing bowl.
To a mixer or food processor add the bananas and blend until smooth. Add the eggs and vanilla and blend again until just mixed in. You don't want to over mix the eggs.
Now fold the wet ingredients into the bowl with the dry ingredients, add the chocolate chips and gently stir until all ingredients are blended together.
Scoop the batter into prepared loaf pan.
Bake for 40 minutes and check to see it center is cooked through.
Remove from oven and let cool for 10 to 15 minutes.
